Cellulose is a type of fibre from cell walls of plants, such as wood pulp. It is a thickening agent in foods and drinks to produce smooth and creamier texture. It can also act as a bulking agent, keep sugar from crystallising, bind water etc.
As it is derived from plant source, it is commonly used for vegetarian and vegan supplements.
